Ch-Ch-Changes

Since I started my job in December I haven't been blogging as much as would like to. I keep thinking I'm going to start getting serious about it- whatever that means- but I never have the confidence to really go for it. All that to say, to kick off our fourth year of blogging (woah!) we are going to be making some changes. Changes ranging from design to more involvement from the one and only Joe. I hope you'll join us and invite your friends! Some exciting things are ahead.

This is our two hundredth post! Wow! We have documented a lot of events on this blog, and it has been a wonderful way to watch the journey of our marriage unfold. Of course I blog for you, the reader (all 5 of you), but I think I really do it for myself. It's a way to share, celebrate, grieve, relax, and sometimes even worship the Lord.

My Inspiration

Apparently I draw much of my blogging inspiration, or maybe motivation, from Joe. He has been in D.C. since Saturday and I haven't had blogging on my mind. This week has been slightly eventful, enough to keep me from going stir crazy till my Mr. gets home. I did some shopping, some working, and some nursing our sick pup. He got a little stomach bug, and I think the culprits are the acorns he has been sneaking when we go potty. Sheesh. He had me worried for a bit, but after a swift visit to the vet I was reassured. This weekend is quite long awaited. We are finally heading back to Aggieland. Just typing it makes me giddy. I have been dreaming of CStat for months. We are bringing Rémy, and I can't wait to strut him around campus on Friday evening. I'm sure we will have hundreds of photos. Most importantly we are going to watch the fightin' Texas Aggies BTHO idaho. Joe gets home tomorrow and I am so ready. If you think of it, please keep him in your prayers.

Happy 100th!

It's my 100th post! Yahoo. I have been thinking of blog topics, pictures to share, etc. I thought about lists of various 100 things, life in 100 words, and so on to celebrate or commemorate my 100th blog post. So I will do a little of each. 100 is a too big of a number, it's a bit overwhelming so I will stick with 10.

Journey

It has been a journey since I began blogging. Not really because of the blog, but blogging has been a way to document the journey of our first and second years of marriage.

Managed to not make the cut. We went to a Spurs game, and I never blogged about. What?!?! It was awesome. We are officially fans, and the At&t Center is way cheaper (parking, food, beverages) than any Houston arena I have ever been to.

51st Post


My last post was my 50th post... *sigh* and I missed it. Totally didn't realize it. Oh well. So here's to my 51st post! I don't have much to say- school is busy, recital in less than 3 weeks, my grandpa is home from the hospital after 2+weeks PTL, I'm now a member of a music fraternity... and that's about it. BUT this weekend is going to be pretty stinking exciting! Dan and Amy are coming to town!! Yay! We were a little worried they wouldn't want to come after the Aggie football team played so poorly against Mizzou, but they are! I can't wait to play hostess. So y'all hurry up! Here are other things I'm excited about:


My senior recital ready or not is just about here! My stomach is turning as I type this. 18 days!


Harry Potter and the Deathly Hallows Part 1 comes out November 19th! 24 days!


As of yesterday Thanksgiving (my favorite holiday) was one month away!! Can't wait for turkey, cranberry sauce, Rolls, and STUFFING! 30 days!


My graduation is less than two months away! 53 Days!




I have heard that Highland Village is decorated for Christmas already. While I wont be able to see it until thanksgiving, just the knowledge makes me giddy. 59 Days!

First Foodie Blog Post

Lately I have had the urge to enter the foodie blog world, oh my. I've decided that these foodie bloggers have lots of time, or more than I possess anyway. So, I'm sure these entries will be few and far between, but I'm really excited about getting started. My first new and experimental recipe for the weekend was Summer Citrus Pancakes.


Summer Citrus Pancakes

1 Large Egg
1 Cup of Unbleached Flour
3/4 Cup of Low-Fat Milk
1 TB of Sugar
3 tsp of Baking Powder
1/4 tsp of Salt
1/2 tsp of Vanilla Extract
2 TB of Canola Oil
Zest from 1 Lemon (or citrus fruit of choice)

1.Whisk the egg until fluffy. Add all ingredients through Lemon zest, and whisk until smooth.
2.Heat a highly oiled griddle, nonstick pan, or skillet on medium-medium high heat. Pour 1/2 cup of mixture and brown on both sides.

These were really tasty, not too high in calories, and SUPER easy.
Later that day, I made my first trek to Specs. It was really fun, actually. I loved looking at all the wines and specialty foods. I had a gift card and was hell bent on buying something. So after much deliberation, I thought a Pina Colada sounded pretty dang good. Joe looked up a quick recipe, we picked a middle of the line rum and got the extras. Well, lets just say the first swing was a miss. Bleh. My genius husband made some alterations, I added my two cents and the end result was amazing. It was creamy, with the perfect amount of froth and not too strong. Even Joe, single malt scotch on the rocks Joe, really liked it. I'm excited to call this recipe wholly ours.


Jose's Perfect Pina Colada

Blend:
2 cups of Ice
5.5 oz of Pineapple Juice
3-4 oz of dark Rum (to taste)
4 TB of Lite Coconut Milk
2.5 TB of Granulated Sugar
Blend for 30s & garnish with a cherry and pineapple slice.
